Wellbeing Wednesdays: Soups ‘n Such

Event Description

Join MSU dietetic intern, Charlotte Edmondson, and MSU Health4U Dietitian, Abby Richey, as they team up to demonstrate 3 soups for any winter day. We’ll show you how to make each of them, plus you get to try each recipe. This event will be offered in person to the first 10 people who register or via Zoom. The event will be held at the Bailey Hall Community Kitchen on campus. After you register, look for an email from Abby Richey to confirm in-person or virtual attendance.

Learning Objectives

  1. Learn about the various ways you can make soup.
  2. Use today’s recipes for a potluck or group get together
  3. Learn new techniques to help make a delicious soup

About the Speaker: Charlotte Edmondson, MSU Dietetic Intern and Abby Richey, MS, RD

Charlotte Edmondson is a dietetic intern and graduate student Michigan State University. She is obtaining a M.S. in Nutrition and Dietetics and plans on taking the RD (Registered Dietitian) test after graduating in December 2023.

Her interest in food and nutrition started at an early age with her being involved in dance for 13 years. The rise of social media, diet culture, and body image piqued her interest which then led her to obtain a B.S. in Nutrition and Dietetics at Western Michigan University in April of 2022. In her free time, she enjoys reading, watching TV, and spending time with family and friends.

Abby Richey serves as the Registered Dietitian for Michigan State’s Health4U program. Her work focuses on helping individuals discover the joy of eating for good health and wellness. She works with clients through individual counseling sessions and on-campus programming.

Abby earned her bachelor’s degree in dietetics and fitness from Purdue university in 2003 and a master’s degree in kinesiology from the University of Illinois in 2010. Her professional background in nutrition and fitness includes working in areas of healthcare, WIC, food service, sports nutrition, higher education, cooking demonstrations, and counseling.

Abby lives in Lansing with her husband, 3 children, and dog. In her free time, she enjoys being outdoors and going on new adventures with her family.
